Helpful Turkey Tips KY Tech Health/Food Tip #49 How much turkey should you buy?* Purchase 1 pound of uncooked turkey (frozen or fresh) per personFresh vs Frozen Turkey* Buy a fresh turkey 1 to 2 days before the big day. * Frozen turkeys can be kept in the freezer indefinitely, but for best quality cook within 1 year.To Thaw turkey in refrigerator (at 35-40 degrees)* Allow approximately 24 hours for every 4 to 5 lbs.* 4 to 12 lbs. - allow 1 to 3 days / 12 to 16 lbs. - allow 3 to 4 daysTo Thaw turkey in cold water * Allow approximately 30 minutes per pound.* Wrap the turkey securely; making sure the water is not able to leak through the wrapping.* Submerge the wrapped turkey in cold tap water; change the water every 30 minutes. * Cook turkey immediately after thawing. Don’t REFREEZE!Cooking the Turkey* Remove giblets from the turkey cavity after thawing and cook separately.* Set oven temperature no lower than 325 degrees F. 325 – 350 is most often used for cooking a turkey in the oven.* For quality, let the turkey stand for 20 minutes before carving to allow juices to set. The turkey will carve easily as a result of waiting.Did YOU Know?It is safe to cook a turkey from the frozen state. The cooking time will take at least 50 percent longer than recommended for a fully thawed turkey. Remove the giblet packages during the cooking time.
